"Start" of the Week Stuff
The kids had an extra day off of school to make Memorial weekend a 4-day weekend, so we didn't come home until yesterday, and we're working with a super short week this week. I thought that would make it an easy week, but so far it seems to just be making me feel short on time. Trying to make my menu and get all the shopping and stuff done today before I have my niece the next two days.
To-Do's:
Wednesday- meal planning, grocery shopping, laundry, cleaning, PT appointment for M
Thursday- A here, SB practice for M, open house at kids' school
--get a scrapbook page done sometime before Friday--
Friday- A here
Saturday- games for both kids (same time, different towns, lol)
Sunday- church, afternoon by the pool @ Mom's
Menu:
Wednesday- pasta w/ meat sauce and artichokes
Thursday- Costco take-n-bake (to take w/ us)
Friday- Oven Baked Chicken Fajitas
Saturday- breakfast
Sunday- something @ Mom's
There's only 3(ish) weeks left of school, a 3-day week this week, 5 days next week, and then my kids will only have 4 days the last week (they're missing the last day to go see the Giants play in Seattle with 40 of our closest relatives). :) Only 16 more days, 11 more school mornings. We have a week and a half left of baseball and dance. Next week is going to be crazy with everything ending on Saturday, and then it will all be over. It always seems like such a crazy time right before school gets out with everything winding down at once. I still need to figure out teacher gifts for this year and get those done, we haven't made our summer list yet (but I bought the poster board weeks ago), and the kids want to make signs to bring to the Giants games. Life is crazy right now, but summer is right around the corner!

Hard choice tonight, I ended up with a few pictures that I love. I'm going with the sunglasses picture; they were watching the reflection of the eclipse in my sunglasses, and I think it represents today and something extra special that they got to see. The other two pictures will go in the "extra" pages I'm planning for the back of my book. :)

Last week was totally off. R was home not really sick the first 3 days, and then I had my niece the next 2, so I didn't make it to the grocery store and had to totally wing it. We did okay, picked up pizza after baseball one night and went out last night, but I REALLY need a menu this week!
Monday- Costco pizza on the go, bring dessert (brownies or s'more bars, I haven't decided yet)
Tuesday- Oven Baked Chicken Fajitas
Wednesday- Italian Crescent Casserole
Thursday- leftovers
Friday- pasta with meat sauce & veggie
And that's it for the week!

Scrapbook Tuesday
Britt was having her floors refinished, so this post had to wait until she could get back in her house. :)
Galactic Alliance is the flashback kit for May. I'd never used it before, it came out when I wasn't a Britt Girl, and I don't have a lot of Star Wars pictures (yet, I think it's coming with R), so I never picked it up. I'm so glad I got the chance to use it this month though! It's perfect for boy pages, and I'm sure I'll be using it again! Here's the page I did with it and the AO (available on Britt's blog).

I actually made my menu Sunday night, just spaced on posting it until today. lol
Menu:
Monday- pizza rolls and jicama sticks
Tuesday- slow cooker ham & white beans
Wednesday- sausage with peppers and pasta
Thursday- leftovers
Friday- grilled cheese with bacon and apples
Saturday- ?
Sunday- bday party food
To-Do's:
Monday- grocery shopping, dance for M, baseball game for R
Tuesday- softball practice for M
Wednesday- nothing :)
Thursday- practice for R, game for M, watching my baby niece A during the day
Friday- A here
Saturday- games for both kids (at roughly the same time)
Sunday- church, birthday party for my nephew
I can't believe it's MAY already! This year is flying by! I'm so looking forward to summer and being done with baseball/softball/dance for a little bit. I know we still have 7 weeks, but Memorial day is just a few weeks away and then summer will be here after that!

I was browsing my Pinterest board and got a head start on next week's menu. :) Thought I would post it here so I can remember it all later. :)
Cheesy Chicken Pesto Pasta Bake
Crock pot shredded beef (tacos, and something else another night)
Chicken Parmesan meat loaf (made in muffin tins so it bakes up in only 15 minutes!)
